Quick Quiche

Fresh out of the oven Spinach & Cheese Quiche

Recently, my dad and sister came to pay us a visit before the spring semester would begin. Before they left around brunch time, I thought of a quick meal for them to have before they hit the road. All I had in my kitchen was some spinach, onions, and eggs. I found a frozen pie crust in the freezer that I needed to hurry up and use before it got freezer burn . I thought I would  put it all together and try a quiche.

If you do not have much in your fridge except some veggies that need to be used up or even a half bag of some frozen veggies, try a quiche. Not only is it super easy and filling, but a healthy alternative to the regular meals you may eat from week to week. I think they look pretty and elegant too! They are great to bring to a party or get together.


Quick Quiche
Difficulty: Easy/Medium/Hard
Preparation Time: 5-10minutes
Cooking Time: 35 minutes
Serving Size: 6

INGREDIENTS: 1 frozen pie crust, 5 eggs, 3/4 cup of milk, 1/2 tbl. salt, pepper to taste, 1/2 package of frozen  spinach (thawed & drained), 1/2 package of shredded cheese, 1/2 of an onion, veggies or meat  of choice*



INSTRUCTIONS: Preheat oven at 375 degrees. Thaw pie crust. In a medium bowl, wisk eggs, milk, salt, & pepper. Spread drained spinach, meats, cheese & veggies  into bottom of the pie crust. Pour egg mixture over ingredient in crust. Sprinkle with left over cheese.  Bake for for 15 minutes. Reduce heat to 325 degrees and continue to back for 20 minutes, until crust is brown and mixture is puffed. Let stand 5 minutes.

* Add any additional ingredients to the basic egg mixture. Swiss cheese works great! Sprinkle with a pinch of nutmeg to add additional flavor. You can replace the milk with heavy cream if you would like to add additional richness to the dish.
